I don't know what the poundage was this year, but 136 jars of reduced tomato sauce made there way through our pressure canner in the past two weeks! Last year we did around 80 jars, so it was more this year.

I think I have mentioned my vitamix love, here is another reason, we did nothing to the tomatoes, the blender completely takes care of skins and seeds. We throw them in, it blends them up.

We cook it down to get rid of air (from blending) and water from the tomatoes.

Throw it in our massive pressure canner (holds 14 quarts)
And we get this. Oh so pretty. The red is phenomenal.
Asher packed them up this year for us.
He really is such a good helper.

Bring on Winter, we are stocked up.

Looks terrific! Good job Asher! Labels should read ASHER'S AWESOME TOMATO SAUCE. We had such a bad season for tomatoes all up and down the east coast between rain and the plant virus. Boo Hoo. We'll look forward to tasting your sauce!
