
Oh pesto, how we love you. The brightness of summer captured and frozen.


Yet another reason we love our vitamix. Pesto is great, but actually a little pricey to make. Lots of organic olive oil, lots of nuts and that basil sure grinds up fast. We opt to leave the cheese out to cut out some cost (we can always add cheese to a dish later) and though the seeds we sub in for traditional nuts aren't local, they could be grown locally, they are just organic and cost 1/3 of the price of pecans or walnuts. And parsley adds just the boost that we like.

We tried a combo of pumpkin and sunflower seeds this year, pretty tasty. 24 cups in the freezer.
