It's Time!!

For one of the best sandwiches of the year. The tomatoes are coming in of the vine, and this is what we have been waiting for. Sliced on homemade bread, with the bacon we cured- from the local organic piggy bellies, layered with mayo with made from our backyard hen's eggs, topped with lettuce from north urbana (no one grows it like jon). We endulge why we can.
This is a seasonal delight- tomatoes are only here for a short time of the year fresh like this to slice, and once you have them the right way, you can't go back to having them year round whan the inferior ones that are flown in bred to travel, not to taste like their mama's mama's mama's mama's mama's mama- when they were soooo sooo good, thank goodness for those who saved the beloved heirlooms seeds for all of us to enjoy. And thank goodness for good prairie soil and eating seasonally.
